How to make a Dirty Chai Latte with Coffee Foam

Our upgraded version of a Dirty Chai: the drink that appeases both tea and coffee drinkers alike. Warming, spiced chai with rich coffee and a creamy coffee foam.

Start by preparing your Chai Concentrate using the instructions below (or, for foodservice partners, skip this step and simply use our bag-in-box Chai Concentrate), make your Coffee chai and Coffee foam, and then move on to constructing your final drink.

Chai Concentrate

What you need (for approx 10 drinks)

  • 1ltr water
  • Approx 50 cardamom pods (5g)
  • Approx 30 black peppercorns
  • 18g cinnamon sticks
  • 6g whole clove
  • 3 star anise
  • 6g nutmeg (roughly 2 whole, broken)
  • 50g fresh ginger, unpeeled and sliced
  • 6g fennel seeds (2 tsp)
  • 1 vanilla pod, halved and seeds removed
  • 150g dark soft brown sugar
  • 18g (approx 7 tsp) Assam tea (or another robust black tea)

Method

  1. Add your sugar and spices to a pan with the water and bring to the boil with a lid on
  2. Simmer gently for 10 minutes
  3. Add the tea leaves & simmer for a further 5 minutes
  4. Set aside for at least 30 minutes
  5. Use a fine strainer or muslin to strain into a clean, lidded bottle or jar and allow to cool fully
  6. Keep in the fridge for up to 2 weeks

Coffee chai

What you need (for approx 3 drinks)

  • 200ml Chai Concentrate
  • 100ml cold brew coffee concentrate (or cooled espresso / strong batch brew - ideally a Washed process coffee with chocolatey/nutty/raisin notes to balance the Chai spice)

Method

  1. Combine the Chai Concentrate and cold-brewed coffee concentrate.
  2. Transfer to a clean bottle and store in the fridge for up to 1 week (or up to 48 hours if using fresh coffee rather than a concentrate).

Coffee foam

What you need (for approx 3 drinks)

  • 300ml Oatly Cold Foam
  • 60ml cold brew coffee concentrate (or cooled espresso / strong batch brew - as stated previously, ideally a Washed process coffee with chocolatey/nutty/raisin notes to balance the Chai spice)

Method

  1. Combine the cold Oatly Cold Foam and coffee concentrate in a large jug.
  2. Whisk with a milk frother until light and foamy, ensuring the coffee is thoroughly combined.

Dirty Chai Latte with Coffee Foam

What you need (per drink)

  • 100ml hot water (80°C)
  • 100ml steamed milk
  • 80ml coffee chai
  • Coffee foam

Method

  1. Add the hot water to a cup, followed by the steamed milk, holding back any excess milk foam.
